Easy Weekday Dinner

Stir-fries are my go to dinners when I want something quick, healthy, and want to get rid of leftovers.  This is what I made last night for dinner:


  • 3 tablespoons Asian Fish sauce
  • 1 tablespoon soy sauce or tamari
  • 2 tablespoons of fresh lime juice
  • 1 tablespoon sugar
  • 1 onion, thinly sliced
  • four cloves of garlic minced
  • 1 zucchini
  • 1/4 lb. green beans
  • 3 bok choy chopped
  • 1 bunch Chinese broccoli chopped
  • protein of choice (I used salmon) chicken, fish, tofu
  • sesame or vegetable oil


1)  Mix in a bowl sugar, fish sauce, soy sauce, and lime juice.  Set aside.

2)  Heat 1 teaspoon of oil in a wok or skillet.  Saute onions until they’re tender.  Remove from heat.

3)  Sauté zucchini and green beans separately until tender and remove from heat. Add more oil if needed.

4)  Sauté garlic until fragrant, then add sauce (see step 1) to pan and bring to a boil.

5)  Add bok choy and Chinese broccoli to pan. Once it turns bright green, return vegetables previously sautéed to pan.  Add choice of protein.  I used leftover salmon from Sunday’s dinner.

6)  Serve with brown rice.  Top with basil leaves.

The great thing about stir-fries is you can add whatever vegetables you have.  Try asparagus, snow peas, add ginger, or jalapenos if you want it spicy.  Garnish with cilantro.

TIP:  Cook rice in rice cooker before you leave for work.  Rice will be perfectly cooked by the time you get home!
